Staff:The staff consists of a dapper yet intense-eyed owner and assistants.
Spices on the table:On the table, there are seasonings such as black pepper, white pepper, and shichimi chili powder. Coarsely ground shichimi chili powder is also available.
Cutlery on the table:Soup Spoons are provided, and only disposable chopsticks are available.No tissues or business cards.
BGM:The background music is Western pop.
Free Toppings:Toppings include garlic, vegetables, fat, soy-based seasoning (“karame”), and fish powder (for Mazemen only).
Noodles:The noodles are flat and straight with a slight curl. The firmness is just right, though leaning a bit on the softer side. It should be noted that at the Ichinoe JIRO, the firmness cannot be adjusted. The portion size is modest for Jiro, about the same as at the Meguro JIRO, making it feel more like a snack.
Char-siu Pork:Unlike typical Jiro pork, the pork here is not large slices but block-shaped pieces. It’s not the type that falls apart (“horohoro”) but rather one that offers a nice chew.
Soup:The soup allows you to fully enjoy the FZ soy sauce flavor, with a lower degree of emulsification. It’s a flavor I personally enjoy.
Boiled vegetables:The vegetables are about 70% bean sprouts and 30% cabbage, with a relatively strong crispness that pairs well with the FZ soy-based broth.
Garlic:The garlic is finely chopped and small-cloved. It has a mild flavor, different from the punchier medium or large-cloved garlic.

The taste basically follows the standard ramen, but despite being Mazemen, it still gives the impression of having a fair amount of broth.
The broth is about half the amount of a regular ramen. Naturally, the flavor is excellent and very delicious.
For the soupless version, fish powder can be added as a topping, which adds a nice accent to the broth’s flavor.
