Staff:The staff consists of the gentle-faced owner, the owner’s wife, and assistants, creating a family-like atmosphere inside the shop.
Spices on the table:On the table, there are seasonings like pepper and shichimi chili powder.
Cutlery on the table:Spoons are available, and only disposable chopsticks are provided. Tissues and toothpicks are also available. No business cards.
BGM:The background music is Bunka Housou (Cultural Broadcasting).
Free Toppings:The toppings follow the standard Jiro style, but for tsukemen (dipping noodles), free toppings are not asked by default, so if you want any, inform the wife or assistants when handing over your meal ticket.

Noodle:The noodles are flat but slightly thinner for Jiro-style, and they are cooked on the softer side (“dero”). The portion size is either the Jiro standard or just slightly smaller.
Char-siu Pork:The pork is a bit thinner than typical Jiro but very tender, melting in your mouth.
Soup:The soup leans towards non-emulsified, allowing you to enjoy the sharpness of the soy-based broth.
Boiled vegetables:The vegetables are about 80% bean sprouts and 20% cabbage, with the cabbage being slightly crisp and the bean sprouts cooked to a medium firmness.
Garlic:The garlic is small-cloved and mild.

The noodles are the same flat, soft “dero” noodles as the standard ramen—light and fluffy with a slight chew. The portion size is about the same as the small ramen.
The pork, like the normal ramen, consists of several small pieces. If you have room, adding more pork could be a good option.
The soup is primarily FZ-soy sauce based with a slightly spicy miso flavor that blends nicely. It’s not overwhelmingly miso, but rather a mildly emulsified soup with a pleasant kick of spicy miso. Rich, sweet, and flavorful.
The vegetables on this day had a bit more cabbage than usual. Both the cabbage and bean sprouts were crisp and fresh.
The garlic, as always, came in small, mild cloves.
