Staff:The staff consists of the usual glasses-wearing owner and assistants.

Spices on the table:On the table, there are seasonings such as powdered pepper, shichimi chili powder, and soy sauce tare.

Cutlery on the table:Only disposable chopsticks are available, no soup spoons. Tissues are provided, but no business cards.

BGM:The background music remains the same, low-volume AM radio.

Free Toppings:The toppings follow the standard Jiro style, but options like firmer noodles or “mashimashi” (extra toppings) are not available.

Noodle:The noodles are flat, slightly thin, and have a fairly strong straight texture. The firmness is just right—not too firm (“boki”) nor too soft (“dero”). The portion size is modest for Jiro, making it a good option for beginners.

Char-siu Pork:The pork is block-style and nearly falls apart, easily breaking with chopsticks. It’s well-soaked in the tare sauce, just to my liking.

Soup:The soup leans toward non-emulsified, with the salty and umami-rich soy tare flavor spreading directly in your mouth.

Boiled vegetables:The vegetables are about 90% bean sprouts and 10% cabbage. They’re cooked to a medium firmness, somewhere between crisp and soft.

Garlic:The garlic is medium to large in size, with a relatively mild flavor.
