Staff:The shop staff consists of the usual duo(a shop owner and an assistant). The owner handles the evening shift, while the assistant takes care of the daytime shift.

**Please note that due to the assistant’s health issues, the shop is currently only open during the weekday daytime shift.

Spices on the table:Condiments include pepper and ichimi (red chili pepper).

Cutlery on the table:The shop provides a soup spoon and only disposable chopsticks. Toothpicks and tissues are available. No business cards.

BGM:The background music is the radio.

Free Toppings:Toppings follow the standard Jiro style, with the familiar Shinagawa options of double, triple, or even tower-sized portions of boiled vegetables. The back fat is served in a thick, rich consistency.

Noodle:The noodles are flat and straight with a slight curl, and they’re cooked to be slightly firm. You can enjoy their chewy texture as you dip them into the broth.

Char-siu Pork:The pork slices are relatively small, not large, and they strike a perfect balance—not too hard, not too soft.

Soup:The broth has a creamy consistency, leaning towards a sweet and salty flavor profile that makes you want to keep using your soup spoon—it’s delicious.

Boiled vegetables:The vegetables consist of 80% bean sprouts and 20% cabbage. They’re quite crunchy, creating a delightful combination with the chewy noodles.

Garlic:The garlic is medium-sized, between small and large cloves, with a sharp flavor that makes its presence known.
