Staff:The staff includes the owner, originally from the old Koganei Kaido JIRO(not existed), and several assistants. The atmosphere in the shop is lively.

Spices on the table:On the table, there is GABAN pepper, chili pepper, soy sauce-based seasoning, and vinegar.

Cutlery on the table:Soup spoons are available, but only disposable chopsticks are provided. There are no tissues or business cards.

BGM:The background music includes both Japanese and Western songs.

Free Toppings:Toppings are standard Jiro-style.

Noodle:The noodles are typical Jiro-style flat and thick, with a relatively straight texture. They are slightly soft but smooth and easy to slurp. The portion size is a bit larger than the Jiro standard.

Char-siu Pork:The pork sits beneath the vegetables, medium-sized and medium-thick, with a tender texture. It’s well-seasoned and melts in your mouth, disappearing quickly.

Soup:The broth is lightly emulsified, rich with FZ soy sauce flavor, while also subtly highlighting a bit of sweetness.

Boiled vegetables:The vegetables are about 70% bean sprouts and 30% cabbage, cooked to a crunchy, firm texture.

Garlic:The garlic is medium-sized and mild.
