Staff:The staff consists of the owner and an assistant.

Spices on the table:Condiments include GABAN pepper, ichimi togarashi, and soy sauce tare.

Cutlery on the table:Soup spoons are available, but only disposable chopsticks are provided. There are no business cards.

BGM:The background music is FM-Tokyo.

Free Toppings:Ramen toppings are standard for Jiro-style but back fat is soy sauce flavored by default. If you want non flavored back fat, you can ask for “shiro-abura” to get it. As for the “New-Mazemen”, the free toppings include vegetables, garlic, flavored fat, basil mayonnaise, and fried onions.

Noodle:The noodles are standard flat thick noodles with a slight curl. The boiling level is medium. The portion size is standard for Jiro-style.

Char-siu Pork:The pork is a large, thick-cut type. On this day, one slice was perfectly tender, but the other slice was dry and disappointing.

Soup:The soup is emulsified, with a strong soy sauce flavor, but it also has a rich, milky taste and is sweet and savory.

Boiled vegetables:The vegetables are a 9:1 ratio of bean sprouts to cabbage, with more bean sprouts. They are cooked to a crisp texture.

Garlic:The garlic is large-grained but relatively mild in flavor.


New-Mazesoba(Free toppings are vegetables, garlic, flavored fat, basil mayonnaise, and fried onions) 

The “New-Mazemen” comes with an egg yolk by default. The pork on this day was slightly smaller in size.

While the fried onions are noteworthy, the key ingredient is the basil mayonnaise. It nicely mellows the rich soup, which has a hint of ginger, and adds a refreshing touch with the basil flavor.
