Staff:The staff includes the owner, who hails from the former Tsurumi branch, and several assistants. The operation has a warm and friendly atmosphere.

Spices on the table:On the table, there are seasonings like pepper, shichimi chili powder, and vinegar.

Cutlery on the table:Soup Spoons are available, and only disposable chopsticks are provided. No tissues, but toothpicks are available.

BGM:The background music is the radio.

Free Toppings:In addition to the usual toppings, pickled ginger (beni shoga) is also available.


“Ramen(Free toppings are soy sauce and garlic)”

Noodle:The noodles are thick, flat, and curly, typical of Jiro-style. They are cooked slightly firm (“boki”), allowing for a hearty, chewy texture. The portion size is about standard for Jiro.

Char-siu Pork:The pork is large and medium-thick, tender but just shy of falling apart, making it delicious.

Soup:The soup is mildly emulsified but leans more towards a sweet and salty flavor.

Boiled vegetables:The vegetables are about 70% bean sprouts and 30% cabbage, cooked to a medium level.

Garlic:The garlic is small to medium-sized cloves with a mild flavor.

The toppings, vegetables, and pork flavor are in line with the standard ramen, but by default, fried onions, an egg yolk, and black pepper are added.

Since it’s a soupless (shirunashi) dish, the flavor is richer than a regular small ramen. This time, I added grated cheese as a topping, making it even more indulgent.

Additionally, for the Mazemen, after finishing the noodles, you can request a “soup wari” (broth dilution).
