Free Toppings:The toppings follow the standard Jiro style, but options like firmer noodles (“katame”) or extra servings (“mashimashi”) are not available. Calls (for free toppings) should be made loudly and clearly.
“Ramen(Free topping is garlic)”
Noodles:The noodles are thick, flat, with a slight curl. They are cooked a bit firm, giving them a nice chewy texture. I’m pleased with the firmness as it’s just how I like it. The portion size is slightly smaller than the Jiro standard.
Char-siu Pork:The pork is medium-sized and thick, well-marinated in soy sauce. Although it’s lean, it’s tender and breaks apart easily in the mouth, making it very tasty.
Soup:The soup is mildly emulsified, leaning slightly towards emulsification, with about a 60% FZ soy sauce component and 40% emulsification. It’s rich, sweet, and salty (umami and salty-sweet).
Boiled vegetables:The vegetables are about 80% bean sprouts and 20% cabbage, cooked to a medium degree.
Garlic:The garlic is finely chopped and small-cloved, but has a decent spiciness.
