Noodles:The noodles are medium-thick and flat, with a straight texture. They are cooked just before reaching the “overcooked” stage, making them smooth and easy to eat. The portion size is about standard for Jiro-style ramen.
Char-siu Pork:The pork is a medium-sized, thick slice of “@buta,” placed under the vegetables. It is tender, just shy of falling apart, and gradually breaks down in your mouth.
Soup:The soup is non-emulsified, allowing for a well-balanced FZ flavor. When chili oil (ra-yu) is added, it transforms into a flavor reminiscent of hotpot soup.
Boiled vegetables:The vegetables are about 80% bean sprouts and 20% cabbage, with a firm, crisp texture.
Garlic:The garlic consists of large cloves, adding a noticeable spicy kick.
