Staff:The staff during the daytime shift consists of the founder of Ramen Jiro (Mr. Yamada) and assistants. Mr. Yamada looks after the shop until midway through the daytime shift, after which the assistants, who come from the Ichinoe branch and others, take over. The nighttime shift is managed by the founder’s son and assistants.
Spices on the table:On the table, the only seasoning available is white pepper.
Cutlery on the table:As usual, there are no Chinese soup spoons, plastic chopsticks, tissues, or business cards provided. There are just disposable chopsticks.
BGM:The BGM is familiar to Ramen Jiro lovers: during the day, it’s Mr.Yamada’s conversations, and at night, it’s his son’s.
Free Toppings:The available free toppings are vegetables, garlic, soy sauce, and pork fat.

Noodle: The traditional flat thick noodles were served slightly firm on this day, allowing for a robust wheat flavor and a pleasantly chewy texture. The portion size was about the standard for Jiro.
Pork: Large and thickly cut. While the Mita honten’s pork can sometimes be too chewy, this time it was soft and tender, with a nicely concentrated flavor—definitely a hit.
Soup: A sharp flavor, with a non-emulsified “FZ soy sauce” base.
Vegetables: They were 90% bean sprouts and 10% cabbage, boiled to a slightly soft texture.
Garlic: Medium-sized cut with a spicy kick.
