Spices on the table:On the table, there are seasonings like pepper and shichimi chili powder.

Cutlery on the table:Soup spoons are available, and only disposable chopsticks are provided. Tissues and toothpicks can be found next to the water dispenser. No business cards are available.

BGM:The background music is FM Tokyo.

Free Toppings:The toppings follow the standard Jiro style, but extra-extra vegetables (“mashimashi”) are not allowed. Noodles can be ordered as firm as “kata-kata(extra firm)”. The fat (abura) is served in large chunks.

Noodle:The noodles are flat but thinner compared to typical Jiro-style, with a strong straight texture. Many customers prefer their noodles firm (“kata” or “kata-kata”). The default firmness is medium. The portion size is slightly smaller than the Jiro standard.

Char-siu Pork:The pork is medium-sized and medium-thick, well-marinated in soy-based sauce. It has a perfect balance of firmness and flavor, making it delicious.

Soup:The soup tends to be non-emulsified but still offers a well-balanced flavor with a touch of sweetness.

Boiled vegetables:The vegetables are about 80% bean sprouts and 20% cabbage, cooked until slightly soft.

Garlic:The garlic comes in small cloves and has a mild taste.
