Staff:The staff consists of the owner and assistants. The operation is carried out with the rhythmic efficiency typical of the owner.

Spices on the table:On the table, the only seasoning available is shichimi chili powder.

Cutlery on the table:No soup spoons are provided, only disposable chopsticks. There are no tissues or business cards.

BGM:The background music is J-WAVE.

Free Toppings:The toppings follow the standard Jiro style, but the vegetables are served in larger portions by default. Noodle firmness adjustments are not available.

Noodle:The noodles are flat, slightly on the thin side, with a strong straight texture. The firmness is medium, and the portion size is standard for Jiro, providing just the right amount.

Char-siu Pork:The pork is somewhere between large and medium-sized, made from pork belly. It’s tender and falls apart easily, melting in your mouth.

Soup:The soup is highly emulsified, with a rich, thick, and creamy texture—almost like a “milk Jiro.”

Boiled vegetables:The vegetables are about 70-80% cabbage and 20-30% bean sprouts, cooked soft.

Garlic:The garlic is small-cloved with a mild spiciness.
