Staff:The staff includes the somewhat rugged-looking owner, originally from the Yaen Kaido and former Koganei shops, along with several assistants. The atmosphere is friendly and welcoming.

Spices on the table:On the table, there is pepper, ichimi chili pepper, vinegar, and soy sauce-based seasoning.

Cutlery on the table:Soup spoons are available, with only disposable chopsticks provided. Tissues and paper aprons are available, but no business cards.

BGM:The background music is FM radio.

Free Toppings:Toppings are the usual Jiro-style. At the Sendai shop, you buy your meal ticket first and then line up.

Noodle:The noodles are flat and medium-thick, with a fairly strong straight texture. They are slightly soft, leaning towards a “delo” (soft) texture. The portion is the Jiro standard.

Char-siu Pork:The pork is medium-sized and medium-thick, almost at the point of becoming tender, falling-apart pork.

Soup:The broth is heavily emulsified, with a rich, creamy flavor and a sweet umami taste, resembling a “buta potage” (pork-based soup).

Boiled vegetables:The vegetables are about 70% bean sprouts and 30% cabbage, with a slightly crunchy texture.

Garlic:The garlic is small to medium-sized, with moderate spiciness.
