Noodle:The noodles are flat but very straight, with minimal curl, making them smooth and easy to slurp. The portion size, as expected from the Jimbocho JIRO, is large and very filling.
Char-siu Pork:The pork is somewhat smaller compared to other Jiro branches but is well-seasoned and tender.
Soup:The soup isn’t heavily emulsified. It’s said that the Jimbocho JIRO’s soup forms an oily layer on top, and while I was prepared for that this time, it wasn’t as prominent today.
Boiled vegetables:The vegetables are about 70-80% bean sprouts and 20-30% cabbage, cooked to a level between crisp and soft.
