Staff:The staff includes 4-5 people, including the owner and assistants. It’s a large team, and the kitchen has a lively and friendly atmosphere.

Spices on the table:Black pepper, ichimi(red chili pepper), and soy sauce tare are available.

Cutlery on the table:The soup spoon is served in the bowl with the ramen. There are tissues available, but no business cards. Paper aprons are provided by order. Disposable chopsticks and toothpicks are available.

BGM:The background music is J-POP.

Free Toppings:The toppings are standard for Jiro, but you can choose whether the back fat topping is in chunks or not.

At the Kotakibashi shop, when there is a line, you buy your meal ticket first and then line up. Be prepared to show your ticket and indicate your free toppings when asked.

Noodle:The noodles are flat, very thick, straight, and slightly shorter. By default, they are cooked a bit firm, allowing you to enjoy a crisp and smooth texture.

Char-siu Pork:The pork is typical Jiro-style, large and thick. It’s like braised pork belly, tender and melting in your mouth. Just the way I like it.

Soup:The soup has a slightly emulsified tendency, allowing you to enjoy a milky “FZ soy source” flavor.

Boiled vegetables:The vegetables are a mix of 80% bean sprouts and 20% cabbage, slightly crispy.

Garlic:The garlic is medium-sized, but it packs a punch with a strong spiciness.

The pork is similar to the one in the ramen, but the noodles are straight and rinsed with water, giving them a firm and smooth texture.

The soup has an emulsified taste with an added tanginess, giving it a punchy flavor.

Additionally, quail eggs and bamboo shoots are topped by default. The portion of noodles felt relatively small.
