Staff:The shop is run by a duo. The owner and an assistant. The operation is well-organized.

Spices on the table:Condiments include ground black pepper and ichimi (red chili pepper).

Cutlery on the table:Only plastic chopsticks are provided, and there are no soup spoons. Tissues are located on top of the ticket vending machine. No business cards are available.

BGM:The background music is FM Tokyo.

Free Toppings:Toppings follow the standard Jiro style. Customers should purchase a meal ticket before lining up.

“Ramen(Free toppings are vegetables and garlic)”

Noodle:The noodles are flat, slightly thin, and completely straight. They have almost no curl and are smooth, making them easy to eat. They’re cooked slightly firm, and its portion is a substantial 350 grams(before boiled base amount).

Char-siu Pork:The pork is thick and large, typical of Jiro style. Unfortunately, on this day, one slice was dry and not up to par.

Soup:As expected from Sengawa, known for its non-emulsified broth, you can fully savor the “FZ soy source” flavor. Additionally, the broth has a hint of ginger, which suits my taste perfectly.

Boiled vegetables:The vegetables are about 70% bean sprouts and 30% cabbage, cooked to a medium consistency—neither too soft nor too crunchy.

Garlic:The garlic is medium-sized and has a relatively mild flavor.
