Staff:The staff includes the owner, who is from the Mita honten, and several assistants. The atmosphere inside the restaurant is homey.

Cutlery on the table:There are soup spoons available, and only plastic chopsticks. No tissues or business cards are provided.

Noodle:The noodles are flat, extremely thick, and quite slippery, making them easy to eat. They are not too hard nor too soft, but have just the right firmness. The portion size is slightly larger than the standard Jiro.
Char-siu Pork:The pork slices are large, thick cuts typical of the Jiro lineage, almost tender but still with a bit of chewiness.
Soup:The soup is more on the emulsified side but not overly creamy, and you can still feel the “FZ soy sauce” presence.
Boiled vegetables:The vegetables are in a 7:3 ratio of bean sprouts to cabbage, with a strong crunchy texture when cooked.
Garlic:The garlic is medium to large cloves, but mild in flavor.

The soup, which is slightly emulsified, has flavors of chili oil, sesame oil, and a hint of sourness added, creating a perfect blend of Chinese-style taste and the original FZ-based soup. This combination stimulates the appetite and is very delicious.
